Spice Mix

  • 1 T Ancho Chili Powder
  • 1 t Cumin
  • 1 t Oregano
  • 1 t Cayenne
  • ½ t Garlic Powder
  • ½ t Onion Powder
  • ¼ t Smoked Paprika
  • ¼ t Cinnamon

Ingredients

  • 1 oz Olive Oil
  • ½ C Onion Chopped
  • ½ C Bell Pepper Chopped
  • C Garlic Minced
  • 1 lb Ground Beef
  • 1 t Salt
  • ½ t Pepper
  • ½ lb Kidney Beans Dry
  • 6 oz Tomato Paste
  • 1 Tomato Chopped
  • 1 Pint Chicken Bone Broth Low-sodium
  • 2 Pints Water

Instructions

Prep

  • Bowl 1: Spice Mix
  • Bowl 2: Onion, Garlic, Bell Pepper
  • Bowl 3: Salt, Pepper
  • Bowl 4: Tomato, Tomato Paste

Assembly

  • Heat oil in the stock pot you will use to cook the chili.
    Add onion, garlic, and bell pepper.
    Cook a few minutes
  • Add ground beef, salt, and pepper.
    Cook till brown
  • Add spice mix, tomato paste, and tomato.
    Bring to a boil, then simmer 2 hours or until beans are done
    Stir occasionally

Notes

Makes great leftovers or topping for hotdogs or casseroles.
